Energy Booster Salad

Lets clean up our eating, here is one of my favourite wholesome quick and easy to prepare Energy Booster Salads which you can whip up at home but tastes gourmet. This salad is full of healthy fats, antioxidants and fibre.

It’s great for digestion and is filled with nutrients, vitamins and magnesium.

Each ingredient boasts a plethora of healthy benefits.

In fact, one cup of kale has only 36 calories, 5 grams of fibre and 0 grams of fat!

Also, it is well known that chronic inflammation is one of the leading causes of many killer diseases such as heart disease, type 2 diabetes, Alzheimer’s disease and obesity. Pomegranate has highly effective anti-inflammatory properties that reduce the inflammatory activity that cause such diseases.

  • Ingredients:
    2 cups Kale
    1/2 cup Carrot
    1/2 cup Beetroot
    1/2 cup Celery
    1/2 cup Pomegranate
    1/4 cup Pumpkin Seeds
    1/4 cup Sunflower Seeds
    1/4 cup Crushed Walnuts
    100gms Cubed Fetta
    1 Avocado
    1/4 bunch Coriander
    1/4 tsp Cayenne Pepper
    dash of Cumin optional
  • Dressing
    1 juice of Lemon
    2 tbs Olive Oil
  • Method
    Cut and prepare all ingredients to your liking.
    Place ingredients into a bowel add dressing and toss until all ingredients are coated.
    Serve with smoked salmon, grilled chicken or it can be eaten by itself as it is very substantial.

This recipe is the perfect addition to clean eating. It will nourish your body and keep the medicine away.

Feel free to substitute some of the ingredients if you don’t have all of them at home! I love to add roasted pumpkin or sweet potato.
